Smirnoff Upside Down Cake Cocktail

While browsing the liquor store I stumbled on the Smirnoff Iced Cake flavored vodka, and even though I don't normally choose this brand, I had to try it. Cucumber Soup (Warm)

I never would have believed it, until someone made me eat some: cucumber soup can be served warm and is really yummy! It's easy, quick, inexpensive, low fat, and really tasty - just perfect comfort food for the colder months! This is a traditional Belgian recipe. Even my kids loved this and said it tasted like broccoli and cheese soup - but better (I agree!). It has a very mild taste and the cucumber is not overwhelming. Some black pepper really brings out the best in this recipe.

This is probably my favorite pasta recipe of all time. Originally from Food & Wine's "Pasta" cookbook, I've tweaked it over the years to my taste. Here's their description: "Slender capellini soak up sauce like a blotter. So, toss the pasta first with butter and then ladle the basil-infused sauce over each portion." Their wine recommendation is a Vinho Verde from Portugal. Yum, one of my favorites too! NOTE: Cooking time is refrigeration time. Serving size is a guess. This recipe was one of several passionfruit recipes in an expat magazine. I haven't tried them yet, but these little gelatin squares sound really good! Passionfruit is yellow here, and is sweeter than the purple variety found in the US. I made this for dinner today and it was great! It is important to use fresh ingredients. It has to be veal not beef and it has to be fresh rosemary leaves, the taste is surprising – lemon, rosemary, garlic joined together. OK, for diet version you may use turkey steaks. For side dish I just cooked potato in salted water and sprinkle with olive oil. I think it can also go well with rice or mashed potato. The nice thing with this meal is that it is quick; so my advice is to prepare everything in advance.

Had the most amazing mahi mahi with limoncello sauce at a great Italian restaurant, the chef gave me hints of what was in the sauce, so i experimented, tweeked and lots of samplings later,,here it is..sooo wonderful. I used tilapia but any white fish would work. To plate..place the sauteed fish over a bed of creamed potatoes and pour the sauce over the top..I served with minted peas, fresh green beans and baked tomatoes( baked with anchovies, garlic, basil and olive oil)

Hearty Black Bean Stew

I threw this stew together one day when I was trying to use black beans in a meal that wasn't Tex/Mex. I think the Italian spices and cumin/ garlic really blend together well for a different flavor. It is important to add the oil in to get the beans creamy, you could reduce it a little to be healthier but don't leave it out altogether. Sometimes my beans take a little longer to cook, and sometimes they are done a little quicker - I usually try to err on the side of starting them a little early.

A fabulous recipe from SmittenKitchen.com. The author of the blog, Deb, says: " There’s a lot of broccoli and very little pancake in this fritter. The broccoli is not grated or pureed, but left in small, recognizable bits that are bound lightly, faintly, to their batter of egg, parmesan and flour. And when you cook them right — that is, to a crisp, in a preheated, heavy, oil-slicked skillet — they get a fantastic crisp edge to them. To serve: I like these with a dollop of the garlicky lemon yogurt I share here, roughly 1 cup plain yogurt, 2 tablespoons lemon juice, 1 tiny minced clove of garlic, a bit of zest and salt. It would also be good with this homemade ricotta, with or without additional lemon juice. They’re also good simply, with just a squeeze of lemon juice. A versatile, and very simple recipe. I didn't have cream cheese, so I came up with this. Next time I will add parmesan and other cheeses. The ingredient amount was done by eyeballing it. The chocolate egg cream is a tasty drink that's been around since the 1920's. Popular in delicatessens throughout New York City, it contains neither egg nor cream. No one is totally certain where the name came from. While the traditional egg cream is made with a high-pressure seltzer siphon bottle, very few of us have these at home... so, you have to improvise to get that beautiful foamy white cap on top of your egg cream. It won't be the perfect deli-style egg cream, but it will come real close (I promise!!). You can also use vanilla syrup, instead of chocolate, for a Manhattan Egg Cream, the process is the same.

It has been one of my favorite dishes ever since - especially once I discovered how absolutely simple it is to make Veal Piccata at home.
