Resep Udang: Grilled King Prawn, Carrot and Ginger Emulsion
Foto: www.detikfood.com Jakarta - Udang panggang ini rasanya gurih kenyal. Mendapat aksen rasa segar dari sayuran tumis plus saus jus wortel yang manis segar. Enak dimakan hangat dengan kentang panggang yang hangat gurih. Yuk, bikin!

Bahan:
4 ekor udang windu, kupas, biarkan kepala dan ekornya
2 sdm herb oil
100 g sayuran yang dipotong kecil panjang (wortel dan zucchini)
1 sdm minyak olive
daun ketumbar
Carrot and Ginger Emulsion:
3 sdm minyak sayur
80 g kulit udang
200 ml jus wortel segar
2 sdm saus tiram
1 siung bawang putih, cincang halus
1 sdt jahe, cincang halus
? sdt merica bubuk
1 sdt garam

Cara membuat:

Bumbui udang dengan garam, merica dan herb oil. Panggang hingga matang. Angkat.Tumis sayuran dengan sedikit minyak hingga layu.Bumbui dengan sedikit garam dan merica, aduk rata.Carrot and Ginger Emulsion:Panaskan minyak, tumis kulit udang hingga berubah warna selama 2 menit.Tambahkan bawang putih dan jahe, tumis selama 2 menit.Tuangi jus wortel, didihkan hingga berkurang setengahnya.Tambahkan saus tiram, bumbui merica dan garam. Saring.Susun sayuran tumis di tengah piring.Taruh udang di kelilingnya.Tuangi sausnya, beri daun ketumbar.Sajikan hangat.Untuk 2 orang
