Brocolli Parmesan Fritters

A fabulous recipe from SmittenKitchen.com. The author of the blog, Deb, says: " There’s a lot of broccoli and very little pancake in this fritter. The broccoli is not grated or pureed, but left in small, recognizable bits that are bound lightly, faintly, to their batter of egg, parmesan and flour. And when you cook them right — that is, to a crisp, in a preheated, heavy, oil-slicked skillet — they get a fantastic crisp edge to them. To serve: I like these with a dollop of the garlicky lemon yogurt I share here, roughly 1 cup plain yogurt, 2 tablespoons lemon juice, 1 tiny minced clove of garlic, a bit of zest and salt. It would also be good with this homemade ricotta, with or without additional lemon juice. They’re also good simply, with just a squeeze of lemon juice. I think I’d also enjoy them with a little crumbled feta on top. Oh, and of course, you can put a runny fried egg on top of it. But I don’t need to tell you that.". Enjoy!

This recipe is from the restaurant located in Gangivecchio, the 600-year-old Tornabene family home in Sicily. In Italian, antipasti literally means "before the meal." Appropriately enough, antipasti are small portions of foods that are served as a tantalizing overture to the fundamental courses in a menu. At Gangivecchio, they typically serve three or four of an assortment of antipasti rustici. A small amount of each antipasto is arranged on individual plates for every diner. In Sicily, until the last several decades, antipasti were served only at special celebrations or large functions like weddings and official receptions. Many Sicilians were too poor and too busy to prepare antipasti. Restaurants really invented antipasti, which were and are often still temptingly displayed on a long table containing as many as two dozen or more dishes. These dishes ranged from stuffed vegetables to marinated seafood, usually served at room temperature.

Lemon & Sage Chicken

My friend, Corrie, is an amazing cook, and this one comes from her kitchen. She made it on the grill when she served this (which was awesome!), but I had to adapt it to a stove top recipe. I also changed it ever so slightly to suit my tastes, and added a simple gravy to drizzle over the top. You could easily increase the lemon juice to 1 cup to make enough marinade for more servings.

Simple Seafood Dip/Spread

A versatile, and very simple recipe. I didn't have cream cheese, so I came up with this. Next time I will add parmesan and other cheeses. The ingredient amount was done by eyeballing it. Add as much or as little as you'd like. As for special notes about this recipe, this is a base recipe, with the ingredients I had onhand. I definetly plan of adding herbs and cheeses in the future. Prep and cook time does not include if you have to shell crab, prawns or sear scallops first. We did, but we caught our crab :)

The chocolate egg cream is a tasty drink that's been around since the 1920's. Popular in delicatessens throughout New York City, it contains neither egg nor cream. No one is totally certain where the name came from. While the traditional egg cream is made with a high-pressure seltzer siphon bottle, very few of us have these at home... so, you have to improvise to get that beautiful foamy white cap on top of your egg cream. This always reminds me of the first time, many years ago, when I ate Veal Piccata at a wonderful, tiny, but always busy, Italian trattoria in Boston's North End. It has been one of my favorite dishes ever since - especially once I discovered how absolutely simple it is to make Veal Piccata at home. Foto: detikfoto Jakarta - Ketupat dan lontong matang biasanya jadi pilihan dari pada membuat sendiri. Maklum saja membuat ketupat dan lontong perlu kesabaran. Namun, perlu waspada karena banyak penjual ketupat dan lontong matang memakai bahan aditif non pangan.

Bahan aditif yang biasa dipakai berlebihan oleh penjual lontong dan ketupat adalah air abu/bleng yang berlebihan. Akhir-akhir ini banyak penjual memakai boraks atau pjer dengan takaran berlebihan. Tujuannya membuat tekstur ketupat dan lontong jadi kenyal dan tidak cepat basi serta warnanya cerah.

Kalau terpaksa harus membeli lontong dan ketupat matang, perhatikan hal berikut ini:

Pesan dan belilah lontong dan ketupat matang 2-3 hari sebelum lebaran karena biasanya penjual banyak meneima pesanan dan tidka memiliki stok cukup.Pesan dan belilah pada penjual langganan sehingga sudah tahu kualitas buatan mereka.Jangan memilih ketupat atau lontong yang terlalu keras. Biasanya penjual menambahkan air abu berlebihan sehingga ketupat dan lontong menjadi sangat keras/kenyal.Ketupat dan lontong kini juga banyak diberi tambahan bahan non pangan seperti boraks/pijer sehingga lebih kenyal dan tahan lama.Pilihlah lontong dan ketupat yang tak terlalu keras, tekan kedua ujungnya, pilihlah yang lembek menandakan tidak diberi bahan pengenyal.Ketupat dan lontong tanpa tambahan bahan non pangan berlebihan biasanya lunak, lembut teksturnya.Khusus untuk ketupat pilihlah yang jarak antar lipatannya agak berlubang atau berongga. Jika diberi bahan pengenyal teksturnya keras, dan lipatan daun kelapanya cenderung merapat.Sebelum disimpan, kukus ketupat dan lontong selama 30 menit, dinginkan lalu simpan. Hal ini untuk mencegah basi karena kita tidak tahu kapan lontong dan ketupat itu dimasak oleh penjualnya.Jika akan disimpan lebih dari sehari sebaiknya simpan lontong dan ketupat di dalam lemari es. Dengan cara ini lontong dan ketupat bisa tahan 3-4 hari.Saat akan disantap, kukus lontong dan ketupat dalam kukusan panas selama 30 menit.

Foto: Thinkstock Jakarta - Sebuah inovasi baru berhasil menciptakan sereal dalam bentuk batangan padat. Camilan sehat ini ternyata mengandung gula sekitar empat sendok teh. Menurut sebuah penelitian, kandungan gula didalamnya melebihi kandungan gula pada cola.

Satu dari 30 sereal bars mengandung tinggi gula dan sabanyak 16 produknya mengandung lebih dari 30 persen gula. Sebuah penelitian berhasil mengungkapkannya karena saat ini kebanyakan orang memilih sajian sarapan praktis yang bisa dimakan saat perjalanan ke kantor.

Seperti yang dilaporkan Daily Mail, ditemukan kandungan gula sebanyak 18 gram atau sekitar 4 sdt pada satu kemasan sereal batangan. Kandungan gula ini jumlahnya melebihi sekaleng cola berukuran 150 ml yang hanya sekitar 15,9 gram gula.

Meskipun pada kemasan tercatat informasi nutrisi seperti kadar lemak, gula dan garam, namun secara keseluruhan hasil penelitian menunjukkan bahwa, enam dari tujuh sereal bar yang biasa dikonsumsi anak-anak mengandung tinggi lemak jenuh.

“Orang sering memilih sereal karena mereka yakin lebih menyehatkan dibanding cokelat atau biskuit, namun pada penelitian menunjukkan bahwa ini adalah sebuah mitos. Produsen harus lebih jelas memberikan informasi berapa banyak gula, lemak dan kalori yang terkandung dalam snack bars.” ungkap Richard Lloyd, Direktur Eksekutif.

”Kami ingin semua makanan memiliki sistem kode warna, sehingga orang dapat melihat dengan mudah apakah makanan ini aman dikonsumsi dan cocokkah jika diberikan pada anak-anak.” tambahnya.

Pelayan restoran seringkali menjatuhkan mangkuk atau piring dari baki yang dibawa karena terlalu berat atau bergerak terlalu cepat. Inilah yang meninspirasi Ryan Jongwoo Choi, seroang designer keturunan Korea yang tinggal di London untuk menciptakan Magic Tray. Kini Ryan masih belajar di BA Product Design di Central Saint Martins College of Art and Design London.

Baki ini akan membuat piring atau mangkuk di atasnya tetap di tempat, tidak bergerak kekiri atau ke kanan meskipun dibawa berjalan oleh pelayan. Baki ini berukuran panjang 50 cm dan lebar 25 cm dan terbuat dari plywood dan bisa membawa 2 mangkuk atau piring dan 2 gelas.

Ryan, 25 tahun yang berasal dari Korea Selatan ini merasa terusik melihat pelayan restoran selalu kesulitan membawa piring dan mangkuk dalam baki. 'Makanan dan minuman jatuh atau tumpah saat dibawa di baki karena posisi beratnya sulit dikontrol saat dibawa bergerak. Karenanya saya melakukan riset pada restoran dan pelayan dan berusaha menciptakan sesuatu yang bisa menolong mereka,' demikian ujarnya pada dailymail.

Magic Tray dibuat dengan lapisan magnet di antara lapisan kayu. Piring dan mangkuknya dirancang khusus dengan lingkaran magnet di bawahnya. Saat diletakkan di atas baki, piring dan mangkuk akan tetap di posisi karena daya magnetik dan tidak bisa bergeser. Ketika baki ditaruh pegangannya akan membuat lapisan magnet menjauh sehingga piring dan mangkuk mudah diangkat.

Menurun rencana bulan September produksi baki ini akan dimulai dengan pembeli serius dari Amerika, Inggris dan Korea. Harga baki diperkirakan sekitar Rp. 750.000 dengan harga cangkir Rp. 90.000 dan piring Rp. 15.000 per buah. Menurut rencana akan dibuat ukuran lebih kecil sehingga bisa dipakai untuk rumahtangga.

Kue 8 jam adalah salah satu kue khas Palembang. Namanya yang unik dan gampang diingat karena seperti proses pembuatan kue yang memang membutuhkan waktu 8 jam! Kue yang terbuat dari telur bebek, gula, mentega, dan susu kental manis ini mempunyai tekstur lembut, kenyal, dengan rasa yang manis legit.

Pada masa lalu, kue ini hanya boleh dinikmati oleh kalangan bangsawan Palembang. Kini kue dengan warna khas kecokelatan ini bisa dinikmati siapa saja. Hanya saja, kue ini tidak bisa didapatkan dengan mudah setiap hari. Biasanya hanya dijual pada hari raya seperti Idul Fitri.

Lalu, mengapa harus 8 jam? Kue ini sebenarnya dimasak mengikuti proses bahan mentahnya yaitu telur, gula, dan susu. Dalam waktu 8 jam bahan tersebut akan mengental membentuk karamel sementara telurnya menjadi padat. Proses pemanasan selama dipanggang mengubah bahan cair menjadi padat bersama dengan gula dan susu menjadi adonan karamel.

Bahan dasar kue ini yaitu telur bebek, vanili, gula, tepung terigu, margarin, dan susu. Seluruh bahan dicampur dan dikocok hingga rata, lalu dituang dalam loyang dan dikukus selama 8 jam. Bungkus tutup kukusan dengan serbet bersih agar uap air tak jatuh ke kue. Selama proses pengukusan biasanya air kukusan diisi ulang agar tak kering.

Jika kurang dari 8 jam, kue tidak akan terasa kenyal dan mudah hancur karena belum terbentuk adonan yang kuat. Setelah dingin benar barulah kue ini bisa dipotong-potong dan disajikan. Karena mengandung banyak gula kue ini bisa tahan disimpan beberapa hari.

Foto: Thinkstock Jakarta - Salah satu masalah yang diangkat kaum vegan terkait konsumsi daging sapi adalah dampak kerusakan lingkungan. Namun, hal ini tidak akan menjadi persoalan lagi jika daging sapi tersebut berasal dari mesin cetak 3D di laboratorium.

Optimisme tersebut rupanya membuat Peter Thiel, penemu PayPal, tertarik untuk menanamkan saham di Modern Meadow. Thiel yang juga memangku jabatan penting di Facebook telah menggelontorkan dana sebesar $250.000 (Rp 2,4 milyar).

Modern Meadow adalah perusahaan pemula yang berencana menciptakan daging sapi bioprinted 3D untuk dikonsumsi manusia. Seperti dokter yang menciptakan implan atau bagian tubuh palsu, perusahaan ini bercita-cita membuat daging sapi yang bukan berasal dari sapi, melainkan dengan teknologi di laboratorium.

Saat ini, Modern Meadow juga sedang mengajukan permohonan dana untuk usaha kecil kepada Departemen Pertanian Amerika Serikat. Salah satu rencana jangka pendek yang terdapat di proposal tersebut adalah menciptakan sekerat daging sintetis yang panjangnya kurang dari 2.54 cm.

Menurut Lindy Fishburne, dana dari Thiel merupakan langkah kecil menuju penyelamatan bumi. "Daging sintetis adalah solusi ekonomis dan peduli lingkungan dari masalah global," ujar wanita yang menjabat sebagai Direktur Eksekutif Breakout Labs, sebuah proyek Thiel Foundation ini.

Tampaknya ambisi tersebut bukanlah sekedar untuk mencari keuntungan. Pemilik Modern Meadow, Andras Forgacs, menjelaskan bahwa intensitas sumber daya yang digunakan untuk membuat sepotong burger merupakan kehancuran lingkungan. Sebanyak 0.11 kg burger membutuhkan 3 kg biji-bijian, 200 liter air, 7 meter persegi tanah, dan 1 juta joule lebih bahan bakar fosil.

Makanya, memproduksi daging sapi secara in vitro akan mengurangi kerusakan lingkungan. Menurut Guardian, menciptakan daging sapi di laboratorium dapat menekan 96% emisi gas rumah kaca dibanding memelihara hewan ternak. Hal ini juga dapat menghemat energi hingga 45%, tanah hingga 1%, dan air hingga 4% dibanding produksi daging sapi konvensional.

Thiel memang dikenal senang berinvestasi pada hal-hal yang dianggap di luar nalar. Breakout Labs sebagai salah satu proyeknya memberikan dukungan pada perusahaan yang mengejar tujuan radikal dalam bidang sains dan teknologi.
