Easy No Boil Pretzels

This is adapted from a Stefano Faita recipe. The pretzels are fast, easy to make, no boiling & no rising time. Bake one cookie sheet of pretzels while forming the rest of them. While a true pretzel fanatic will say, but they aren't boiled so they aren't a real pretzel, I say try them. They are soft, salty, slightly chewy & got thumbs up from my biggest critics, my kids. They are best fresh, serve with some mustard or a bit of cheese sauce for dipping. If you want a sweet pretzel omit the salt sprinkle, brush with some melted butter after baked & shake in a sugar & cinnamon mixture.

This recipe comes from The Pioneer Woman, Ree Drummond. First of all: pork butt. It isn’t a pork butt at all, but a pork shoulder. Second, it’s just a wonderful cut of meat. It cooks up moist and tender and results in so much meat, you can either feed a crowd or stretch the meat into at least two or three different meals for your fam damily. this fun and sweet/spicy concoction of Dr. Pepper and chipotle peppers really did turn out to be a lovely combination. If you haven’t ever tried it, cook up a pork shoulder sometime soon. You’ll be amazed at how much you can do with the stuff.

Persimmon Pomegranate Salad

One of those treats I've missed in life until now are Fuyu Persimmons. There are 2 main types of persimmon, these and the Hachiya variety, which must be ripened until they are mush, and then work well in baking. The Fuyu can be simply washed, sliced and eaten. They are very sweet, almost candy-like. This recipe allows them to be paired with the tartness of the pomegranate seeds, and with a simple honey lemon dressing that does double duty if you want to use this as a fruit salad. Just skip the greens and add chopped pears, apples or Asian pears.

Spaghetti Squash Puttanesca With Tofu

Invented this today trying to figure out something for lunch. Ingredients can easily be substituted to make this vegetarian or vegan. Simply use vegetable broth and soy cheese equivalents. Much lower carb than traditional spaghetti. I do the spaghetti squash in the microwave, which is super easy. Cut in half, scrape the seeds, then cook until it breaks into strands easily with a fork. I guessed at the spice amounts, so adjust to your own taste. Prep time includes pressing and draining tofu.

Fig Balsamic Vinegar/Syrup

This is incredible on Caprese salads, but it can be used any time you want a rich, sweet balsamic with lots of fruitiness. It could be considered a "vinegar" but is thicker and sticks to food more like a syrup. It also uses commercial balsamic, NOT artisan balsamic, but you'll never miss it. This is better than any store-bought fig balsamic you can get, and you get so much more for your money!
